Prep, or dark, kitchens are used by market vendors to prepare food distributed at Bristol’s immense food market scene. They pay prep kitchen owners a fee to use their real-estate starved facilities, subsequently transporting the food in plastic tubs to markets and events in vans to serve to hungry customers.This is a wasteful journey, as multiple sets of equipment are used to first cook, store, then serve and distribute the food; a journey that could be streamlined.
Therefore, a solution was ideated in response.The Omni is a compact, intuitive, user friendly but portable professional kitchen unit that Bristol’s large food market scene can employ to prepare meals in prep kitchens to then distribute at open air markets, a booming industry not only in Bristol, but nationwide thanks to Covid-19 pandemic’s effect on the restaurant and hospitality industry.
